Brown Sugar Pound Cake

This is amazing.

2 sticks butter
1/2 cup light brown sugar
1/2 cup white sugar
4 eggs
1 tsp vanilla
1/2 cup almond flour
1/2 cup rice flour
1/2 cup millet flour
1/4 cup buckwheat flour
1 tsp baking powder
1/2 tsp salt

Blend sugars with butter until mixed. Add eggs and blend. Add vanilla

Combine flours separately in a bowl with baking powder and salt. Add the flour mixture slowly to the rest until evenly mixed. Pour into a loaf pan and bake at 350 degrees for an hour.

I also reduced this recipe and made individual cupcakes (cupcakes baked in about 20-25 minutes)

4 cup butter,
softened 3/4 cup white sugar
3/4 cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/4 cups flour (ground almonds, rice and millet)
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
2 3/4 cups rolled oats
1 cup raisins

Mediterranean Quiche

Today I remembered Claire's recipe for Mediterranean quiche. I decided buying a pre-made gluten-free crust wouldn't be necessary, so I jsut grabbed a small rectangular pan.

Total cooking time was 45 minutes, but most of this is waiting for things in the oven. If you have the crust ready, it should take only 10 minutes to prepare and 20 to bake.

For the crust, I melted an inch of a stick of butter, then blended corn meal and rice flour and milk. I am going to try this again and come back with measurements.
